Abstract/SummarySoybean is an excellent protein source for human and animal consumption but it has as well some antinutritional factors such as protease inhibitors, lectins, phytate and sapponin. In this work, the effects of isostatic high-pressure treatment (200-700 MPa), an alternative to thermal treatment, on antinutritional factors phytate and trypsin inhibitor content in 5% soy protein isolate (SPI) solution were evaluated. Two extractions of phytate and trypsin inhibitor of different batch were carried out and the analyses were repeated three times. There is an indication that high-pressure treatment was efficient to eliminate the phytate but could not change trypsin inhibitor content.
